Gazpacho

Makes 5 to 6 servings

Ingredients

  • 1 green pepper, chopped
  • 1 cucumber
  • 2 lbs of tomatoes, chopped
  • 1 garlic clove, crushed
  • 1 egg
  • 1 handful of bread crumbs
  • Vinegar
  • ¼ cup extra virgin olive oil
  • Salt to taste
  • 1 cup of water

Preparation

Place tomatoes, pepper, garlic, salt, egg, bread crumbs, oil, vinegar, and water in blender. Blend until a smooth liquid cream is obtained. Transfer to a bowl and add more water until obtaining 1.5 qts liquid or 1.5 liters.

Leave in refrigerator and serve very cold.
