Chicken Recipes Chicken in Red Wine
Makes 4 Servings
Ingredients 1 chicken cut in pieces 1 small glass of brandy 2 cups of red wine flour 2 onions, finely chopped 2 garlic cloves thyme bay leaf parsley black pepper extra virgin olive oil salt to taste
Preparation
Heat oil in a skillet over medium heat. Season chicken with salt and sauté until golden brown. Add onions. Stir. Add one tablespoon of flour. Stir. Add brandy and red wine and continue cooking, stirring constantly. Add thyme, bay leaf, parsley, salt and black pepper to taste.
In a mortar crush the garlic cloves and parsley. Add some water or broth to dilute garlic. Add mixture to chicken and cook until chicken is tender. Remove the chicken from the sauce. Place sauce in blender to thin. Pour sauce back over chicken. Serve hot. You can serve this dish with a salad or rice.
