Mediterranean Recipe: Baked Eggplants
Makes 4 Servings
Ingredients
2 medium eggplants per person 1 lemon 5 garlic cloves Parsley Extra virgin olive oil salt
Preparation
Heat the oven. Wash eggplants, cut them in half and add a pinch of olive oil. place them in oven for about 30-40 minutes.
In a mortar crush 5 garlic cloves with 1 spoon of olive oil and parsley. Then add the juice of 1 lemon and mix well. When eggplants are ready, take them out of oven, spread sauce over them, turn on grill and place back eggplants in oven for 5 minutes. Serve hot.
