Mediterranean Recipe: Navy Beans with Chicken
Makes 4 Servings
Ingredients
1 lb chicken, cut in small pieces
2 lbs canned dry navy beans (rinsed)
1 onion, finely chopped
½ can of tomatoes, chopped 1 small can of red peppers, chopped
½ glass of dry white wine
parsley
3 garlic cloves, crushed in a mortarsaffron
extra virgin olive oil
salt to taste
Preparation
Marinate the chicken with the garlic for half an hour. Next, spread it with salt and sauté in oil until chicken is brown. Place pieces in a casserole.
In the remaining oil sauté onion, tomatoes and red peppers with the juice. Add garlic with the parsley and diluted in the wine. Cook everything for a few minutes. Pour sauce on chicken and let it cook until tender. Drain navy beans.
When chicken is almost done, add the beans and let it cook for 10 or 15 more minutes. Serve hot.
