Mediterranean Recipe: Eggs in a Garden
Makes 4 Servings
Ingredients
4 hard boiled eggs
2 canned red peppers, sliced
2 carrots, grated
4 small tomatoes
1 lettuce, chopped
black olives, pitted
1 small can of artichokes
extra virgin olive oil salt (optional)
Preparation
Place lettuce on a large plate. Cut tomatoes in halves and place them on top of lettuce. Cut the eggs in half and place them on top of tomatoes. Sprinkle with carrots.
Place the artichokes between the tomatoes. Place the red peppers on top of the lettuce in the center of the plate. Dress with olive oil, lemon and salt (optional).
