Mediterranean Recipe: Cream of Salmon 
 


Makes 4 servings
  


Ingredients
                                     


1 lb fresh salmon                        

2 leeks, finely chopped

1 onion, finely chopped                       

2 chopped carrots

3 tomatoes                                 

2 cups low-fat liquid cream

1 teaspoon paprika                      

black pepper                                

1/3 cup extra virgin olive oil         

salt to taste 

              
Preparation
    
         
Cut salmon in small pieces. In large saucepan over low heat, heat oil. Add onion, carrots, and leeks and sauté for 5 minutes. Add chopped tomatoes. Stir. Add salmon. Add cream, paprika, salt and pepper and cook it for 10 minutes.

          Pour into a blender and process until completely smooth. Return to saucepan and reheat. Serve hot.
