Mediterranean Recipe: Gazpacho
Makes 5 to 6 servings
Ingredients
1 green pepper, chopped
1 cucumber
2 lbs of tomatoes, chopped
1 garlic clove, crushed
1 egg
1 lb of bread crumbs
Vinegar
¼ cup extra virgin olive oil
Salt to taste
1 cup of water
Preparation Place tomatoes, pepper, garlic, salt, egg, bread crumbs, oil, vinegar, and water in blender. Blend until a smooth liquid cream is obtained. Transfer to a bowl and add more water until obtaining 1.5 qts liquid or 1.5 liters.
Leave in refrigerator and serve very cold.
