Orange Color Salad

Makes 4 servings


  • 4 big tender carrots, grated
  • I big seedless orange, cut in small cubes
  • I small onion, finely chopped
  • 1 lemon
  • 3 tablespoons of extra virgin olive oil


Mix the carrots, orange, and onion. In a bowl, mix the oil, the juice of the lemon, and the pinch of salt. Let it stand for a few minutes. Serve cold.
