Makes 4 servings
- 4 big tender carrots, grated
- I big seedless orange, cut in small cubes
- I small onion, finely chopped
- 1 lemon
- 3 tablespoons of extra virgin olive oil
Mix the carrots, orange, and onion. In a bowl, mix the oil, the juice of the lemon, and the pinch of salt. Let it stand for a few minutes. Serve cold.
